real life test kitchen: rachael ray's sweet potato-and-sausage hash

I used to think that sweet potatoes were something you only ate at Christmas-time, but I’ve seen them incorporated in so many great recipes lately, it’s easy to work them to into any meal. The other night I tested out this recipe for sweet potato and sausage hash from the Dec/Jan issue of Everyday with Rachael Ray. I was unimpressed during the cooking process; everything was looking a little beige and undynamic. (I used turkey sausage, btw.) Also, the potatoes took longer to cook than the recipe had said. But eventually all the flavors started peeking and it was looking good. The recipe said to serve with a salsa verde, and I have to say that it was ESSENTIAL. The sweet, onion sausage mixture became so much more interesting with a little peppery spice mixed in.

P.S. In case you’re wondering, I served it with a side of green beans with ginger butter (from Gourmet’s November issue).
