real life test kitchen: cooking light’s mini meat loaf muffins

Last Sunday, I was craving a little comfort food and found this recipe from Cooking Light tempting: Diner Meat Loaf Muffins. They were amazingly easy to make, with just a few basic ingredients needed: Ground beef, carrots, an onion, saltine crackers (!), garlic cloves, two eggs, ketchup, mustard, and some spices. First you cook up the veggies with a pinch of oregano and a little olive oil in a pan — two minutes only. Then you mix that with beef, Worcestershire sauce, eggs, crumbled saltines, ketchup and mustard. Mix it up nicely, and then scoop into a cooking-sprayed muffin pan. Spoon a little ketchup on top of each. I used a mini muffin pan, so mine were smaller than the recipe called for. Bake at 350 for about a half an hour until meat thermometer reads 160. When they were done, they popped out of the pan easily and were very yummy. I served with crispy potato wedges and sautéed green beans. The perfect, good-for-you TV dinner!     this recipe sounds sooo good, i can’t wait to try it out. the saltines crackers aren’t so quirky, my mom used to use crushed cornflakes to add in her meat loaf :)

    i want to put my face into that and never remove myself from the joy that is meatloaf. gonna make this, thanks for the recipe link, but i’ve never heard of saltine crackers! i wonder if i can find that or substitutes in dubai!

    Saltines are like thin, white, salty crackers that you put in soup. Any crack that crumbles easily will work… otherwise, I’d just use white-breadcrumbs with a dash of salt mixed in. Good luck!

    I am equally excited about this recipe. What a good idea to use muffin tins, perfect for freezing for leftovers…
