real life test kitchen: sloppy joes

You don’t have to be hitting the books this week to be craving a little bit of back-to-school, cafeteria-style comfort food. It must be in the in the air ’cause I’ve seen several Sloppy Joe recipes in September magazines. I decided to go with this one from Cooking Light. Making the dish took about ten minutes of prep time and 20 minutes over the stove. Here’s what you do: chop up an onion and a green pepper and saute it with 3/4 lb of ground beef. Once the meat is brown, add two cups canned tomato sauce, 2 tbls tomato paste plus some mustard, chili powder, Worcestershire sauce and a few other seasonings (see recipe for complete instructions). Cover and cook for 15 minutes. I served on a nice crusty hard roll, along with Tater Tots (sometimes, nothing else will do) and broccoli. It took us right back to seventh grade (but in a yummy delicious way, not in a I-hate-gym-class kind of way). — Angela M.
