		<description>I have made this soup twice now and absolutely love it. You are 100% correct when you say that the only tedious part is rolling the meatballs. It&#039;s so easy to make. With just me and my husband eating it, we get three meals.

I have used the escarole both times. The first time, I got a huge head of it and it would have been way too much. The second time, I got a small one and it was perfect. If you use the escarole, I&#039;d suggest chopping it pretty small. Getting a big piece wasn&#039;t too fun. And, don&#039;t make the meatballs too big...you&#039;ll get too full too fast!</description>
