You are 100% correct when you say that the only tedious part is rolling the meatballs. It's so easy to make. With just me and my husband eating it, we get three meals. I have used the escarole both times. The first time, I got a huge head of it and it would have been way too much. The second time, I got a small one and it was perfect. If you use the escarole, I'd suggest chopping it pretty small. Getting a big piece wasn't too fun. And, don't make the meatballs too big...you'll get too full too fast!
