After last week’s gingerbread cake disaster, I decided to satisfy my baking itch with something a little simpler this weekend: cocoa fudge cookies. These treats are made with ingredients I already had handy and in just one pan. Here’s what you need: flour, baking soda, salt, butter, unsweetened cocoa, sugar, brown sugar, plain low-fat yogurt (the recipe is orginially from Cooking Light, so this is the calorie-saving ingredient), vanilla extract and cooking spray for baking sheets. The whole thing takes about 15 minutes - not including baking, of course. The flour, soda and salt are mixed together and set aside. Then you melt the butter in a pan, remove from heat and add in cocoa and sugars till blended. Then stir in yogurt and vanilla. Then add flour mixture. The batter will be fudgey and ready to spoon onto the sheets. I wish my cookies were flatter, and more crunchy, so I would recommend smooshing them with a spoon and baking for at least ten minutes (the recipe says 8 to 10).
