real-life test kitchen: holly d's tamale pie


I first tried this dish when someone brought it to me after I had a baby. In my neighborhood of Cambridge, Massachusetts a group of families organize a “food train” for families with new babies — homemade dinner every two days for two weeks after someone delivers. If the family has twins, this goes on for a month. (Who knows — maybe a “food train” will come Angela’s way soon.)

I never had an actual recipe for tamale pie; I just ad libbed until I got the best result. I served it at our Super Bowl party and it was super easy since it has everything in it and can be served in bowls. The only other thing we served were nachos made on big round corn tortillas with guacamole, salsa and refried beans. For a bunch of New England Patriots fans, the dinner was the winner! — Holly D.

Holly D’s Tamale Pie
Serves 6-8 people.

1 lb of ground chuck or other ground beef
1 finely chopped onion
1 tsp. oil
1 packet of chipotle-flavored taco mix
1 T ground cumin
1 cup frozen corn
1 cup of black beans, rinsed
1 cup of shredded cheddar
1 box of Trader Joe’s or Jiffy corn bread mix

Preheat oven to 350 degrees.

Heat oil, saute onion until transparent, brown beef and add packet of taco mix (follow directions on packet). Stir in cumin. Add corn and beans.

Put mixture in a 9×13 Pyrex dish. Sprinkle with shredded cheese and top with cornbread mix. Bake until cornbread is browned. Serve with hot sauce.
