I have to admit, the first time I ordered this off a menu, it was because I had no other choice. It was a cold, nasty day, I was running late, and this was the only soup left. Lucky me! I hunted down this recipe (sans spinach) and gave it a try. I think it’s a winner! The peanut butter sounds a bit weird, but it adds a nice creaminess. Start with the suggested amount of pepper flakes — I ended up doubling the amount and it still wasn’t overly spicy, although maybe it’s time for a new jar. And since tomatoes are so pale and pitiful this time of year, I opted for a half bag of chopped baby spinach. Make it your own, starting with the recipe here. –Sarah L.
