in five: thai tomato and prawn "stew"

I’ve said before I’m not big on cooking, but a person can’t eat out all the time. Over the past few years, I’ve started to hodge-podge together some quick fixes that take five minutes, taste good, and don’t cost dining-out prices. This little “stew” came from a visit to the local natural market, where the deli soup of the day was Thai Tomato — basically a chunky tomato soup with curry. It tasted so good, I went back the next day, bought more, combined it with boiled prawns and mushrooms, cooked it down just a little, and served it up over linguine. If you can’t find a ready-made Thai Tomato soup, simply buy a chunky tomato soup and add your own curry. Delicious and fast, and you can say you made it yourself. –Mary T.
