Why we like this recipe: It’s amazingly simple yet surprising. The crunchy peanuts really give the coleslaw a great texture. Even though it’s meant to be a side dish, this so yummy you’ll want to have a big bowl. And it’s great for a picnics because there’s nothing here that is going to spoil under the hot summer sun. Enjoy!

Peanut Cole Slaw by Marie White
Here’s the recipe:
1/4 c all natural peanut butter
1/2 c hot water
1/3 c plus 1 T rice vinegar or cider vinegar
3 T brown sugar
1 1/2 t salt
1 T soy sauce
1 t Chinese sesame oil
7 to 8 cups (packed) shredded green cabbage (1 small head)
crushed red pepper to taste
1/2 c peanuts (preferably roasted, unsalted)
1) In a large bowl mash together peanut butter and hot water until they form a uniform mixture.
2) Mix in vinegar, sugar, salt, soy sauce & sesame oil.
3) Pour slowly over the shredded cabbage, stopping several times to stir, to ensure that the cabbage is evenly coated. Add crushed red pepper to taste (remember, this will intensify as the salad marinates.)
4)Sprinkle the peanuts on top right before serving.

Um, you gave 1st place to someone who copied a recipe out of a cookbook? Seriously? It’s a good recipe, yes. In fact, I’ve made it before, because I have that cookbook. It just seems kind of lame – you should probably send the prize to Mollie Katzen.
Hi Donna.. thanks for your comment. We didn’t stipulate any rules for the recipes, which in hindsight we probably should have. That said, any of the entries could have come from cookbooks without us knowing it — Marie was just kind of enough to call attention to her inspiration. Sorry to disappoint you!
This recipe looked and sounded so good. But I really didn’t like it. I wonder if I did something wrong… I generally like peanutty flavor and I LOVE cabbage. It was just too overpowering, or something.
