real life test kitchen: chocolate pistachio pinwheels


I’m heading to Boston to visit family tomorrow, and I wanted to bake something to bring to my newly engaged sister. (Congrats, SA!) Traveling four hours by bus ruled out anything too fussy, including cupcakes, cheesecake, layer cake — really, anything ending in “cake” wasn’t going to do. I decided on pinwheel cookies because of their whimsical look and easily packable status. I found a recipe on epicurious for Gale Gand’s Pinwheel Cookie Dough and set to work. To jazz up the simple vanilla/chocolate swirl, I decided to add 1/4 cup finely chopped pistachios to the vanilla dough. The added color and crunch from the nuts really knocks these cookies out of the park. The prep work for these treats was a bit fussy, but in the end I think the time I put in paid off. They look great and taste even better. –Erica P.

    GAWD, these are gorgeous. I can’t wait to give them a try once my oven has recovered from the power surge that knocked it out of commission. That and my dryer, stereo, two clock radios, Mac Time Machine and luxurious heating mattress pad. Four kids going back to school without a working dryer or oven in the house has been a royal pain. I’ll be good and ready for some fussy, delicious cookies to reward myself and my family with in another week or so!! Thanks for sharing these.
