real life test kitchen: jessica seinfeld's chocolate cake

There’s been a lot of talk (and controversy) about the sneaking of vegetables into kids’ food without them knowing. Jessica Seinfeld (Jerry’s wife) is one of the domestic-types leading this trend, and her book Deceptively Delicious is filled with healthy twists on classic juvenile dishes like grilled cheese sandwiches and chicken fingers. There’s also a big section on desserts that are quasi healthy — they may have veggies in them, but they still contain dairy, sugar and chocolate. Yeah! So when I learned that we’d be celebrating our niece Ruby’s fourth birthday, I decided to give Seinfeld’s techniques a try with her chocolate cake recipe. The secret ingredient? Roasted beets, which are fun to make and puree; their color is so extreme. Even though I added a half a cup of beet puree to the batter, you really couldn’t taste them at all. The cake was dense and moist — and yes, a little reddish. The recipe’s icing is made of cream cheese and cocoa powder… a little too tangy for my liking. We added just a touch of store-bought sugary madness for color (thus the green in the photo above).
