real life test kitchen: peanut chocolate fudge

I am on the hunt for the perfect peanut butter-chocolate rice-crispy treat recipe. That’s because I once had them from a coffee shop in Provincetown, and have been thinking about them ever since. They were like a cross between fudge and a granola bar and were amazingly dreamy. This Rachael Ray recipe for Peanut Butter Fudge Crunch certainly comes close to fulfilling that fantasy. It’s a layered treat that has a lot of the right stuff. However, because of an exorbitant amount of confectioner’s sugar, it reminded me of a Buckeye, the sugary peanut butter chocolate treat we always get in Columbus, OH.     This recipe, courtesy of my sister-in-law, is heavenly. Might not be crispy-crunchy enough for you, but maybe you can doctor it.. by stirring some rice crispies in..?

    No Bake Peanut Butter Bars

    2 cups graham cracker crumbs (I buy them already crunched up in a box)
    1 1/2 cups powdered sugar
    1 cup chunky peanut butter (or plain - and just use extra peanuts)
    1/2 cup butter - melted
    1/2 cup chopped salted peanuts
    1 1/2 cups milk chocolate chips

    Lightly grease 11×17 baking pan and set aside.
    Combine all ingredients except chocolate chips. Press mixture into prepared pan.
    In 1 quart saucepan (or microwave on low heat) melt chips - stir constantly if on stove. Spread melted chocolate evenly over bars. Chill until set before cutting.
