real life test kitchen: lime cilantro turkey burgers
I’ve mentioned the cooking skills of my friend Megan. Well, the great thing about her is, she’s happy to share her secrets. Over the summer, she helped me throw together some turkey burgers that were so easy and so magically delicious that they’ve become a household staple. In fact, they went over so big when I fed them to visiting relatives, my sister made them for her daughter’s graduation party. This is one of those “pinch of this, dash of that” recipes, and that’s a good thing. Out of cilantro? Short on cumin? No problem. My only suggestions are to use high quality ground turkey (we used a suspect store brand once on a trip out of town and the result was strangely mushy) and to not overdo it on the cumin. Lime Cilantro Turkey Burgers (makes about eight burgers)
Two 1 lb. tubes of ground turkey (we use Heidi’s Hens organic and usually combine 1 lb. of white and 1 lb. of dark meat)
One medium red onion, chopped
1/4 of a bunch of fresh cilantro, chopped
Juice of large lime
Cumin to taste (I usually add a tablespoon and then a little more)
Chili powder to taste
Combine ingredients in bowl and form into palm-sized patties. We cook them on our George Foreman Grill for four minutes. We’ve also had great success grilling them on our outdoor grill during the summer.
When grilled through, top with your choice of salsa. We’ve also topped with guacamole and spicy mayonnaise — really, you can’t go wrong. Then try not to eat them all at one sitting.
