real life test kitchen: big apple grilled cheese

I work in one of NYC’s food havens, the Chelsea Market Building. And the other day, during a lunchtime stroll, I was pleasantly surprised to find the pair behind grillchef.com giving out samples of the most amazing grilled cheese sandwich I have had. It was just a bite, but they handed out the recipe and I had to make my own. Here’s how: You need crusty bread (of course), sharp cheddar cheese, an apple (Fuji, braeburn or Granny Smith), one lemon’s juice and zest, 1 tsp of olive oil, and butter. Slice the apples thinly and toss with lemon juice, zest, salt and pepper. Butter one side of two pieces of bread. Build your sandwich — butter on the outside — of cheese, apples, cheese. Grill on a pan or use a George Foreman grill like I did. I can’t quite describe how amazingly good this grilled cheese is. Forget tomatoes (my former staple). From now on I am using lemony apples. Trust me on this one. — Angela M.

Nom! What a fab idea; I’ve long been a fan of cheddar & apples (or a nice slice of cheddar on top of warm apple pie), but never thought to grill it. Also weird-but-good? Thin gingerbread cookies with a nice triple-cream brie…

That reminds me of a sandwich I first tried last year based on something a coworker makes, that has become one of the standards around my house. I saute thinly sliced apples with diced onions and some cinnamon and allspice, and cook up some spicy Italian sausages. It all then gets grilled in a sandwich with provolone – so good! I’ve always used link sausages, though, and I think next time I want to get the ground type and make patties, should be a little less unwieldy and messy. Really, though, it’s worth a bit of messiness for these sandwiches.

Looks fantastic. I’ve also made an bacon, blue cheese with apple slices mac and cheese and it was good! Such a great combo.

How perfect since we’re approaching the end of National Grilled Cheese Month! Part of me wants to slip a little bit of french ham in with the cheddar and apples… YUM.

Sounds divine. Although I think it would also be really good with a slightly sweet gooey white cheese — though I am not a sophisticated enough cheese snob to know what kind I’m talking about.

An add-on: make a “Nutty Vegetarian (my ex- swears it was named after me ;). This is a regular on the menu of a little pub in Corvallis, Oregon called ‘Old World Deli’. Skip the lemon and add roasted & salted sunflower seeds before you cook. After it is finished, slices of avocado are a great addition also (if you can open the bread from the melted cheese goodness). Enjoy!

A local restaurant makes a great grilled cheese sandwich with Granny Smith apples, turkey, gruyere cheese and mayo, on a baguette. Yum!
