Hi Allison–yes, they are! I am not the best baker either, but I had no trouble at all. I think the key is to space them evenly and use parchment paper to line your cookie sheets. Making them into sandwich cookies can be a bit messy but you can always cut off the corner of a Ziplock bag and use it to pipe in the filling (you can also do this to pipe out the actual cookies). Ooh! These look great- they remind me a lot of my current obsession- Gourmet’s inside out carrot cake sandwich cookies. I love the idea of using raspberry jam in there. Delicious!
