real life test kitchen: apple cinnamon muffins

Ever since the summer started, I’ve been baking like Martha Stewart after a case of Pixie Stix. My most recent culinary experiment resulted in what my boyfriend called “the best muffin I’ve ever had in my life.” Okay, Doubting Debbies, usually I would agree that taking on the occupation “boyfriend” means that, by definition, you have to love everything your girlfriend cooks — not true in this case! One of my first attempts at cooking pasta resulted in this review in its entirety: “It’s crunchy.” If there’s one thing he can be trusted on, it’s honesty. In truth, these treats are less muffins and more mini apple pies — very tasty! –Katie D. For those of you brave enough to take on the greatest muffin ever made, click for the recipe!

Cinnamon Apple Muffins
Prep Time: 20 minutes Total Time: 40- 45 minutes Makes: 12 muffins
• 1 ½ Cups of Flour
• ½ Cup of Sugar
• 1 Cup of peeled, diced Granny Smith apples
• 1/8 tsp. Salt
• 1 Egg
• 1 ½ tsp. Baking Powder
• ½ Cup of Milk
• 1/3 Cup of Butter, Melted
• ¼ Cup of Sugar
• ½ tsp. Ground Cinnamon
• ¼ Cup of Butter, Melted
Preheat oven to 350ºF.
Mix flour, ½ cup of sugar, baking powder, and salt together. In another bowl, mix egg, milk, and 1/3 cup of melted butter. Add egg mixture to dry ingredients. Stir. Spoon batter into cupcake mold.
Mix in 1 cup of diced Granny Smith peeled apples (I soaked mine in a little sugar, melted butter, and cinnamon for a few minutes first).
Bake for 20 to 25 minutes.
Combine ¼ cup of sugar and cinnamon. Cool muffins and remove from pan. Dip muffins into ¼ cup melted butter, then into sugar-cinnamon mix.

Sounds yummy. One question, though: Do you mix the apples in the batter first? Or do you drop them into the batter once you have the batter divided into the muffin tin holes?

T Bone- I’d hate to see what you eat for dessert if this will be your breakfast (and by “hate” I mean, “can I come over?” I’ll bring the sweat pants)!

Daffodil- I mixed the apples into the batter first before pouring them into the pan. I suppose you could do it either way, but when i added the apples pre-pour they DID NOT settle and sink to the bottom. Good luck!
