I’ll be totally honest with you — watermelon is not my favorite. I’m not sure if it’s the texture or if I just don’t know how to pick a good melon, but it’s never wowed me. That is, unless you jazz it up a little bit: a little lime juice, ribbons of fresh mint, and some good salty sheep’s milk feta, and a mediocre melon is transformed into a complex and refreshing salad. –Megan B. serves at least 8
1 personal sized watermelon
4 oz. sheep’s milk feta (or your favorite feta), cubed
juice of 1 lime
fresh mint (8-10 large leaves, enough for 3 tbs), chopped
Remove the rind from the watermelon and slice it into half moon slices. Toss the melon (gently) with the lime juice and mint, and let it sit in the fridge for about 30 minutes. Top with the feta and garnish with mint leaves. Enjoy!

Have you ever tried pickled watermelon? I know it sounds totally weird, but it is refreshing and if you can get around a watermelon tasting…well a bit like a pickle, you would probably enjoy the taste too. :)

you’ve got to try nigella lawson’s watermelon, feta and black olive recipe from the forever summer book. similar to yours but a bit more ingredients and very flavorful. i don’t ever really like olives but everything in it works so well together!

We are having this for dinner tonight and I can not wait. Plan on eating with a cold beer and my feet in the kiddie pool.

I TOTALLY agree! i have never been a fan of watermelon, until i had it with feta, weird how it can suddenly turn into something DELICIOUS!
