real life test kitchen: lemon-chicken rigatoni with broccoli

Forget chocolate, crème, and all things sugary: this Valentines’ Day, I’m serving my honey some major carbs! This delicious, super-filling pasta only takes one pot and a few basic ingredients to cook. For all you vegetarians (full-time or part-time), it’s just as tasty without the chicken. Lemon-Chicken Rigatoni with Broccoli
Prep Time: 20 Minutes
Total Time: 45 Minutes
Makes: 4 Servings
* 2 Tbsp. Butter or Margarine
* 2 Cloves of Garlic, Finely Chopped
* 2 Cups of Uncooked Rigatoni Pasta
* 2 Cups Chicken Broth
* 2 Cups Frozen Broccoli
* 2 Cups Chopped Deli Rotisserie Chicken (I usually use leftovers from earlier in the week)
* 1 ½ tsp. Grated Lemon Peel
* ¼ Cups Shredded Parmesan Cheese
MELT butter over medium hear in 12-inch skillet. Add garlic; cook about 1 minute, stirring occasionally, until softened.
STIR in uncooked pasta and broth. Heat to boiling, stirring. Reduce heat to medium-low. Cover; simmer 11 minutes. Stir well.
SPREAD broccoli and chicken over pasta. Cover; cook 12-14 minutes or under pasta is tender.
STIR in lemon peel. Top with cheese.
