real life test kitchen: guinness cupcakes

What’s better than a beer? Beer cupcakes! I made these Guinness cupcakes a little early for St. Patrick’s Day, and they were gobbled up faster than you can say, “Erin go bragh.†Guinness has a subtle, naturally sweet taste to it, so it melded nicely into cupcakes. The desserts weren’t overly sugary and heavy like some cupcakes are (which is both good and dangerous since I ate about four before I realized what happened). • 1 ½ Cups of Guinness
• 1 Stick of Butter plus 1 Tbsp. (Unsalted)
• ¾ Cup Unsweetened Cocoa Powder
• 2 Cups Dark Brown Sugar
• ¾ Cup Sour Cream
• 2 Eggs
• 1 Tbsp. Vanilla Extract
• 2 Cups Flour
• 2 ½ tsp. Baking Soda
MELT the butter in a saucepan over medium heat along with the Guinness.
REMOVE pan from the heat and whisk in the cocoa and sugar.
MIX together sour cream, eggs, and vanilla in a separate bowl. Add to the beer and butter mixture.
MIX together the flour and baking soda in another bowl and fold into the liquid mixture. The batter will still be a little lumpy but will bake out in the oven.
BAKE the cupcakes at 350 degrees for about 20 minutes. Let them cool completely before frosting. Enjoy!

thats interesting! I just became a guinness girl after all this time of light beer. sipping my guy’s I liked the foam and then I started to like the dark.
our local pub? just started serving guinness floats. ice cream and with a drizzle of baileys in a pint of G.
now that’s my kind of beer!

Elayne- The recipe made about 20 cupcakes (although, fair warning, I couldn’t get a decent count since they were gobbled up so fast!).
I used out of the can, store bought icing. I used plain old vanilla, melted it in the microwave to smooth it out, and dyed it green.
